Thai Food Words: How to Read Any Menu in Thailand

Learn Thai food words to read any menu — proteins, cooking methods, and flavors — then decode pad thai, tom yum goong, and order not spicy.

Most Thai dish names are just building blocks stuck together. Learn a protein like gai (ไก่, chicken), a cooking method like pad (ผัด, stir-fried), and a staple like khao (ข้าว, rice), and suddenly "khao pad gai" reads plainly as chicken fried rice. Menus stop being a wall of mystery and start being a puzzle you can solve.

Master three short lists — proteins, methods, and flavors — and you can decode dishes you have never seen before.

Proteins

This is the single most useful list on the menu. Spot the protein and you already know half the dish.

Cooking methods

The second word to hunt for is how the food is cooked. These four cover the vast majority of Thai dishes.

Add the two staples that anchor nearly every meal — khao (ข้าว, rice) and sen (เส้น, noodles) — and the structure of a menu snaps into focus.

Flavors

Thai food chases four flavors at once. These words help you order to taste and describe what you love.

Decode the classics

Now put the blocks together. Once you see the pattern, famous dishes explain themselves.

  • pad thai (ผัดไทย) — Thai-style stir-fried noodles
  • tom yum goong (ต้มยำกุ้ง) — boiled (tom) spicy-sour soup (yum) with shrimp (goong)
  • khao pad (ข้าวผัด) — fried rice, plus whatever protein you name
  • gai yang (ไก่ย่าง) — grilled chicken

A few more words widen your range further. khai (ไข่) is egg, phak (ผัก) is vegetables, and guay tiao (ก๋วยเตี๋ยว) is the noodle soup sold on nearly every corner — so "pad phak" is stir-fried vegetables and "guay tiao gai" is chicken noodle soup. You will not know every dish on sight, but you will almost always catch the protein and the method, and that is enough to order with confidence.

Calling food aroy (อร่อย) is one of the warmest things you can say in Thailand. Street cooks take real pride in their work, and an honest "aroy mak!" — very delicious — with a smile is the compliment that lands every time.

Ordering the way you like it

The last piece is spice. Thai food runs hot, so knowing how to dial it up or down is essential — and always kinder with a krub (male speaker) or ka (female speaker) on the end.
